Chicken Posole Soup
Typically, Posole is made with pork but we used chicken and it was delicious.
Ingredients --
3 chicken breasts, cooked and shredded;
2 yellow onions, chopped;...
4 cloves garlic, minced;
1-2 T olive oil;
2 - 4 oz cans Hatch green chilies, chopped;
4 tsp cumin;
2 tsp oregano;
1/4 tsp cayenne pepper (optional);
1/4 cup fresh cilantro, chopped;
6 - 15 oz cans white hominy;
4 cups chicken stock;
salt and pepper to taste;
Optional toppings --
Tortilla chips
Cheddar or Monterrey Jack cheese, grated
Avocados, diced
Radishes, sliced
